Light chicken Salad w/ Honey-Vanilla Yogurt Sauce

This salad makes a great brunch dish or just have it as a light lunch. Prep time does not include cook time for chicken.

Ingredients

  •   4 c
    cooked chicken, cubed
  •   1 1/2 c
    seedless green or red grapes, halved
  •   1 c
    pecan pieces (or nut of your choice)
  •   1/2 c
    light mayonnaise
  •   1/4 c
    lowfat vanilla yogurt
  •   2 Tbsp
    honey
  •   1 tsp
    poppy seeds
  •   1/4 tsp
    white pepper
  •   1 Tbsp
    fresh lime juice
  •  
    lettuce leaves

How To Make

    In a large bowl combine chicken, grapes and pecan pieces.
  • 2
    In a small bowl, combine mayo, yogurt, honey, poppy seeds, white pepper and lime juice. Add to chicken mixture. Gently toss to coat.

    To serve, line 6 plates with lettuce leaves. Top with chicken salad mixture.
