Ingredients

  • 4 c
    cooked chicken, cubed
  • 1 1/2 c
    seedless green or red grapes, halved
  • 1 c
    pecan pieces (or nut of your choice)
  • 1/2 c
    light mayonnaise
  • 1/4 c
    lowfat vanilla yogurt
  • 2 Tbsp
    honey
  • 1 tsp
    poppy seeds
  • 1/4 tsp
    white pepper
  • 1 Tbsp
    fresh lime juice
  • ·
    lettuce leaves

How to Make Light chicken Salad w/ Honey-Vanilla Yogurt Sauce

Step-by-Step

  1. In a large bowl combine chicken, grapes and pecan pieces.
  2. In a small bowl, combine mayo, yogurt, honey, poppy seeds, white pepper and lime juice. Add to chicken mixture. Gently toss to coat.
  3. To serve, line 6 plates with lettuce leaves. Top with chicken salad mixture.
