- 2 - chicken breast halves, skinless and boneless
- 1 cup cup mayonnaise
- 1/2 stalk celery, diced small
- 4 cups chicken broth
- 1/4 cup almonds,sliced
- 1/4 cup pecan, chopped
- 1/4 cup cranberries, dried
- 1 - scallion diced small
How To Make crunchy chicken salad

Step 1Boil the chicken breast in the 4 cups of chicken broth about 20-30 mins, till tender.

Step 2drain, let cool and chop up.

Step 3combine with the rest of the ingredients...adjust to your taste.

Step 4refrigerate at least 1 hour...ENJOY with lettuce, crackers or bread.
