What to do with your leftover chicken? Make chicken salad! It's so good! I learned to make this from my mom. She didn't measure and added whatever she had on hand as far as the onion went. Could be green, red, or yellow onion. (I have also added a good shot of Ranch Dressing to the salad. It gives it a nice flavor.) I don't really measure either, but I tried to give measurements as listed below. I think it's a good combo!

Ingredients
- 2 cups chicken, cooked and shredded fine
- I even give the chicken a couple of pulses in the food processor
- 1/2 cup mayonnaise
- a good shot of ranch salad dressing
- 1/4 cup green onion, cut very small
- 1/3 cup celery, cut very small
- salt and pepper to taste
How To Make homemade chicken salad

Step 1Mix all ingredients together. Chill until ready to serve.

Step 2I really like this chicken salad on a croissant, or served on lettuce, or a lettuce wrap. Great as an appetizer, to spread on your favorite crackers, or party ryes.
