Homemade Chicken Salad - So Good!

This chicken salad is so good and is a great way to use up leftover chicken. You can also make this with leftover turkey which is great around the holidays. We used to live near a grocery store who had a similar chicken salad that they called, "gourmet chicken salad." They stopped making it over the years, so I decided to make my own. I hope you'll try this recipe!

Makes a large, family sized bowl

  • 4 to 4 1/2 c
    cooked chicken, diced and skin removed (you may also use turkey)
  • 1 c
    celery, chopped
  • 1 c
    chopped pecans
  • 1 medium
    apple, peeled and chopped fine
  • 3/4 to 1 c
    dried cherries, dried cranberries or seedless red grape halves
  • ·
    mayonnaise (amount depends on desired degree of wetness)

How to Make Homemade Chicken Salad - So Good!


  1. Place all ingredients in a large bowl. Add in mayonnaise until desired consistency is reached. Refrigerate and serve on a bed of lettuce, with crackers or on sandwiches. Enjoy!
