homemade chicken salad - so good!
This chicken salad is so good and is a great way to use up leftover chicken. You can also make this with leftover turkey which is great around the holidays. We used to live near a grocery store who had a similar chicken salad that they called, "gourmet chicken salad." They stopped making it over the years, so I decided to make my own. I hope you'll try this recipe!

Makes a large, family sized bowl
Ingredients
- 4 to 4 1/2 cups cooked chicken, diced and skin removed (you may also use turkey)
- 1 cup celery, chopped
- 1 cup chopped pecans
- 1 medium apple, peeled and chopped fine
- 3/4 to 1 cups dried cherries, dried cranberries or seedless red grape halves
- mayonnaise (amount depends on desired degree of wetness)

Step 1Place all ingredients in a large bowl. Add in mayonnaise until desired consistency is reached. Refrigerate and serve on a bed of lettuce, with crackers or on sandwiches. Enjoy!
