Ingredients For high-protein chicken salad

  • 1 lb
    cooked chicken breast or rotisserie chicken, shreadded (about 4 cups shredded)
  • 1/2 c
    diced red onion
  • 1/2 c
    diced apple
  • 2/3 c
    quartered or halved grapes
  • 2/3 c
    plain 2% fat greek yogurt
  • 2 Tbsp
    freshly squeezed lemon juice
  • 1/2 tsp
    garlic powder
  • salt and pepper to taste
  • add 1/3 cup dried cranberries before mixing to increase carbs and sweetness. add 1/2 cup chopped almonds or nut of choice to increast protein and healthy fats.
