Ingredients
- 1 pound cooked chicken breast or rotisserie chicken, shreadded (about 4 cups shredded)
- 1/2 cup diced red onion
- 1/2 cup diced apple
- 2/3 cup quartered or halved grapes
- 2/3 cup plain 2% fat greek yogurt
- 2 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon garlic powder
- - salt and pepper to taste
- - add 1/3 cup dried cranberries before mixing to increase carbs and sweetness. add 1/2 cup chopped almonds or nut of choice to increast protein and healthy fats.
