healthy summer chicken salad
Chicken salad can taste good and be low fat too (only 4 points plus per 1/2 cup serving). I love chicken salad but don't like how much fat and calories are usually in it. So I came up with this slimmed down version that's good on a bagel, pita pocket, wrap or even on a leaf of lettuce.

Ingredients
- 3 cups boneless skinless chicken thighs, baked and diced
- 1/4 cup walla walla sweet onion, finely diced
- 1/2 cup celery, finely diced
- 1/4 cup sweet pickle relish
- 1/2 cup fat free mayo
- 1 ounce fat free herbed feta crumbled with tomato and basil
- 1 1/2 teaspoons cj's seasoning (posted on my recipes), or blackened seasoning
- 1/4 cup fat free sour cream
- 1/4 teaspoon jd 's bacon salt (optional)

Step 1Mix all ingredients well cover and refrigerate for a couple of hours before serving allowing the flavors to blend.

Step 2Note: You can add more feta crumbles to taste, just add 1 ww points plus per ounce of FF feta.
