- 1/2 cup crushed chinese noodles
- 1 small red onion
- 1 can drained black beans
- 1 cup chicken, boneless, skinless, shredded
- DRESSING
- 3/4 cup virgin olive oil
- 1/4 cup balsamic vinegar
- 3 tablespoons dijon mustard
- 1 tablespoon fresh chives
