we used to have this at church get togethers and it is good and healthy

  • 1/2 c
  • 1/2 c
    crushed chinese noodles
  • 1 small
    red onion
  • 1 can(s)
    drained black beans
  • 1 c
    chicken, boneless, skinless, shredded

  • 3/4 c
    virgin olive oil
  • 1/4 c
    balsamic vinegar
  • 3 Tbsp
    dijon mustard
  • 1 Tbsp
    fresh chives

How to Make healthy chicken salad


  1. blend dressing and pour over salad. chill 2-3 hours. serve on a bed of lettuce or fresh spinach
