we used to have this at church get togethers and it is good and healthy

Ingredients

  • 1/2 cup raisins
  • 1/2 cup crushed chinese noodles
  • 1 small red onion
  • 1 can drained black beans
  • 1 cup chicken, boneless, skinless, shredded
  • DRESSING
  • 3/4 cup virgin olive oil
  • 1/4 cup balsamic vinegar
  • 3 tablespoons dijon mustard
  • 1 tablespoon fresh chives

How To Make healthy chicken salad

  • Step 1
    blend dressing and pour over salad. chill 2-3 hours. serve on a bed of lettuce or fresh spinach
