fruity & creamy chicken salad
I love chicken salad and was playin' in the kitchen one day and created this recipe. I was low on mayo so I extended it with creamed cheese. Yummy! I think I now know how those deli chicken salads taste so creamy & rich. The addition of grapes and apple, or pineapple send it over the top in goodness. I learned the hard way not to use fresh pineapple in this salad. It turned the chicken slimy so had to throw that batch out. The prep time does not include the cook time for the chicken, but i usually just use a rotisserie chicken from Sam's Club.

Ingredients
- 4 cups chicken breast or boneless, skinned chicken, cubed, or rotisserie chicken , skinned and boned and cut up.
- 4 ounces creamed cheese, softened
- 1/3 - 1/2 cup mayonaise, start with less & add more if needed
- 1/3 cup vidallia or maui salad dressing
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup green onions or sweet red onion, chopped
- 1 cup seedless red or green grapes, halved
- 1 cup celery, diced
- 1 cup peeled and diced apple or pineapple tidbits (your choice) either is equally good
- 1/2 cup water chestnuts, chopped
- 1/2 cup walnuts or sliced almonds, toasted

Step 1In a large bowl, whisk together softened creamed cheese, salad dressing, & mayonaise until creamy and smooth. Add the S S & P. Prepare all veggies & fruit and fold into creamy mixture. Lastly, fold in the prepared chicken. You can roast a whole one or bake chicken breasts yourself or use a deli chicken, skinned, boned and cut in cubes. When salad is all mixed refrigerate for several hours so flavors will marry.

Step 2Make this salad your own by adding different fruits other than what I used. This is great served on lettuce leaves, a half an avacado, or just by itself. Enjoy!
