Ingredients
- 1 medium red bell pepper, chopped (i like to use jarred roasted red bell peppers)
- 1 cup canned black beans, rinsed and drained
- 1/2 cup corn kernels, drained or thawed frozen corn)
- 2 cups rotisserie chicken, shredded or chopped
- 8 cups romaine lettuce, chopped
- 1/4 cup crushed tortilla chips (optional)
- 1-2 avocados, chopped
- DRESSING
- 1/4 cup red wine vinegar
- 3 tablespoons fresh lime juice
- 2 tablespoons canola oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic, minced
- 1/4 can fresh cilantro, chopped
How To Make favorite southwest chicken salad

Step 1Wash, spin and chop romaine lettuce and distribute among 4 plates.

Step 2Gently toss the beans, corn and chicken together and add dressing to taste. Place chicken mixture on top of romaine. Add chopped avocado (cilantro if desired) on top and add additional dressing if needed.

Step 3Top salad with crushed tortilla chips, if desired.
