Ingredients For favorite southwest chicken salad

  • 1 md
    red bell pepper, chopped (i like to use jarred roasted red bell peppers)
  • 1 c
    canned black beans, rinsed and drained
  • 1/2 c
    corn kernels, drained or thawed frozen corn)
  • 2 c
    rotisserie chicken, shredded or chopped
  • 8 c
    romaine lettuce, chopped
  • 1/4 c
    crushed tortilla chips (optional)
  • 1-2
    avocados, chopped
  • DRESSING
  • 1/4 c
    red wine vinegar
  • 3 Tbsp
    fresh lime juice
  • 2 Tbsp
    canola oil
  • 1 tsp
    cumin
  • 1/2 tsp
    chili powder
  • 1/2 tsp
    garlic, minced
  • 1/4 can
    fresh cilantro, chopped

How To Make favorite southwest chicken salad

  • 1
    Wash, spin and chop romaine lettuce and distribute among 4 plates.
  • 2
    Gently toss the beans, corn and chicken together and add dressing to taste. Place chicken mixture on top of romaine. Add chopped avocado (cilantro if desired) on top and add additional dressing if needed.

    Top salad with crushed tortilla chips, if desired.
