favorite chicken salad
The original recipe for this Chicken Salad came from a dear friend of mine who used to run a catering business. Since this was one of her specialties, I have tweaked it a bit to be different from her original. Everyone loves this salad, and it can be a simple or as elegant as you choose to make it. I love it on croissants, but it is equally good on a bed of lettuce. I ususally serve fresh fruit and chips or crackers as sides.

Ingredients
- 2 cups chopped, cooked chicken breast
- 1 cup celery, finely chopped
- 2 cups seedless grapes, halved (i use red or purple)
- 3/4 cup chopped pecans, walnuts, cashews or sliced almonds
- 1 can ( 11 oz.) mandarin oranges, drained and chopped
- 1/2 cup mayonnaise
- - salt and pepper to taste
- - extra nuts for garnish
How To Make favorite chicken salad

Step 1Combine the chopped chicken breasts, celery, grapes, mandarin oranges and chopped nuts together in a bowl. Set aside.

Step 2In a small bowl combine mayo, salt and pepper to taste. Whisk together.

Step 3Add the mayo mixture to the chicken mixture and gently stir together to blend.

Step 4Serve as a sandwich filling (I love the delicacy of this recipe served on sliced croissants) or as a stand alone salad on a bed of lettuce. Sprinkle with extra chopped nuts to garnish.

Step 5VARIATION: I sometimes use fresh, sliced strawberries instead of the mandarin oranges. I have also used chopped apples. These combinations are really good as well.
