Ingredients
- 8 ounces unsweetened crushed pineapple, drained
- 1 package mini salad shrimp, rinsed and drained
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon finely chopped green onion
- 2 teaspoons dijon mustard
- 1 1/2 teaspoons minced fresh dill
- 1 medium 8-inch cucumber, cut into 1/4 inch circles,skin on and scored
- - fresh dill sprigs for garnish
How To Make cucumber shrimp snacks

Step 1Combine in a bowl the pineapple,shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprig or sprinkle with dried dill weed.

Step 2Note: To score cucumber: Before slicing - take a fork and with the tines scrape them down the length of the cucumber or squash exposing the white of the veggie- until you have scored it all around then slice.
