Ingredients

unsweetened crushed pineapple, drained
1 pkg
mini salad shrimp, rinsed and drained
1/4 c
reduced-fat mayonnaise
1 Tbsp
finely chopped green onion
2 tsp
dijon mustard
1 1/2 tsp
minced fresh dill
1 medium
8-inch cucumber, cut into 1/4 inch circles,skin on and scored
fresh dill sprigs for garnish

How to Make Cucumber Shrimp Snacks

Step-by-Step

  • 1Combine in a bowl the pineapple,shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprig or sprinkle with dried dill weed.
  • 2Note: To score cucumber: Before slicing - take a fork and with the tines scrape them down the length of the cucumber or squash exposing the white of the veggie- until you have scored it all around then slice.
