cin's "chicken salad"

This is one of the ways I like to fix Chicken Salad...or sometimes Tuna Salad. I love sprinkling crushed frito's, tortilla chips or even potato chips on the top. I hope you give this a try and if you do...enjoy!!! Pix by: Cin

Ingredients

  • 1 can (13 oz) premium chunk chicken breast meat (packed in water)
  • 3 tablespoons ranch salad dressing
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 - boiled eggs (diced)
  • 1/8 cup purple onion (rough chopped); i like the color but you could use chives if you
  • 1/8 cup celery (diced); use the leaves too
  • 1/8 cup bread n butter pickles (diced)
  • 2 tablespoons bell pepper (diced)
  • 1/4 teaspoon white pepper
  • 1 dash sea salt
  • 1 dash garlic salt
  • 1/4 teaspoon dill weed mix (i use pampered chef)
  • 1/2 teaspoon dry mustard (ground double superfine)

How To Make cin's "chicken salad"

  • Step 1
    Mix all together. Serve on-or-with Crackers, bite size Tostito's, Frito's Scoops...etc. Or make sandwiches on bread with cheese slices, lettuce and tomato. I even like to use large lettuce leafs and wrap-roll up. We like this served with Bush's Steakhouse Grilling Beans.....yummmmmmmmO P.S. Sometimes I sneak in a little more chopped boiled egg (I love boiled eggs). No...I don't put in the whole bowl!!!!

    P.S. This (my) photo is of Chicken Salad with Frito's crushed on top. At times I grate an apple (usually a Granny Smith) and put in my chicken salads...also sometimes add in drided cranberries. I love both Tuna and Chicken salads with fruit in them, it was a little trick my GrandMother taught me.
