plain fat-free yogurt
1 Tbsp
smooth peanut butter
1 Tbsp
rice wine vinegar
1 tsp
asian dark sesame oil
1 clove
garlic, minced
1/4 tsp
ground coriander

cubed, cooked chicken breast
1 1/2 c
cooked cellophane noodles

scallions, cut into 1-inch lengths

red bell pepper, thinly sliced

8 ounces sliced water chestnuts, drained

trimmed watercress or mixed salad greens

How to Make Chinese Chicken Salad

Step-by-Step

  • 1In a medium bowl, combine the yogurt, peanut butter, vinegar, oil, garlic, and coriander. Add the chicken, noodles, scallions, bell pepper and water chestnuts; toss to coat.
  • 2Cover and refrigerate for at least one hour.
  • 3Serve over watercress or mixed salad greens and then sprinkle with sesame seeds.
