  • 3/4 c
    plain fat-free yogurt
  • 1 Tbsp
    smooth peanut butter
  • 1 Tbsp
    rice wine vinegar
  • 1 tsp
    asian dark sesame oil
  • 1 clove
    garlic, minced
  • 1/4 tsp
    ground coriander
  • 2 c
    cubed, cooked chicken breast
  • 1 1/2 c
    cooked cellophane noodles
  • 6
    scallions, cut into 1-inch lengths
  • 1
    red bell pepper, thinly sliced
  • 1 can(s)
    8 ounces sliced water chestnuts, drained
  • 2 c
    trimmed watercress or mixed salad greens
  • 4 tsp
    sesame seeds, toasted

How to Make Chinese Chicken Salad


  1. In a medium bowl, combine the yogurt, peanut butter, vinegar, oil, garlic, and coriander. Add the chicken, noodles, scallions, bell pepper and water chestnuts; toss to coat.
  2. Cover and refrigerate for at least one hour.
  3. Serve over watercress or mixed salad greens and then sprinkle with sesame seeds.
