Ingredients
- 3/4 cup plain fat-free yogurt
- 1 tablespoon smooth peanut butter
- 1 tablespoon rice wine vinegar
- 1 teaspoon asian dark sesame oil
- 1 clove garlic, minced
- 1/4 teaspoon ground coriander
- 2 cups cubed, cooked chicken breast
- 1 1/2 cups cooked cellophane noodles
- 6 - scallions, cut into 1-inch lengths
- 1 - red bell pepper, thinly sliced
- 1 can 8 ounces sliced water chestnuts, drained
- 2 cups trimmed watercress or mixed salad greens
- 4 teaspoons sesame seeds, toasted
How To Make chinese chicken salad

Step 1In a medium bowl, combine the yogurt, peanut butter, vinegar, oil, garlic, and coriander. Add the chicken, noodles, scallions, bell pepper and water chestnuts; toss to coat.

Step 2Cover and refrigerate for at least one hour.

Step 3Serve over watercress or mixed salad greens and then sprinkle with sesame seeds.
