Ingredients

  • 3/4 cup plain fat-free yogurt
  • 1 tablespoon smooth peanut butter
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon asian dark sesame oil
  • 1 clove garlic, minced
  • 1/4 teaspoon ground coriander
  • 2 cups cubed, cooked chicken breast
  • 1 1/2 cups cooked cellophane noodles
  • 6 - scallions, cut into 1-inch lengths
  • 1 - red bell pepper, thinly sliced
  • 1 can 8 ounces sliced water chestnuts, drained
  • 2 cups trimmed watercress or mixed salad greens
  • 4 teaspoons sesame seeds, toasted

How To Make chinese chicken salad

  • Step 1
    In a medium bowl, combine the yogurt, peanut butter, vinegar, oil, garlic, and coriander. Add the chicken, noodles, scallions, bell pepper and water chestnuts; toss to coat.
  • Step 2
    Cover and refrigerate for at least one hour.
  • Step 3
    Serve over watercress or mixed salad greens and then sprinkle with sesame seeds.
