I made this for a wedding reception once. It is my favorite chicken salad receipe!

1 lb
skinless, boneless chicken breasts
1 large
red skinned apple (such as macintosh or red delicious), cored and cut into chunks
celery stalks, sliced
1/4 c
golden raisins
1/2 c
1/4 c
sour cream
2 tsp
lemon juice
1/2 tsp
1/4 c
walnuts, chopped
1 tsp
1/4 tsp
curry powder
1/4 c
green onions, chopped
romaine lettuce leaves
2 oz
crumbled blue cheese, optional

How to Make Chicken Waldorf Salad


  • 1In an iron skillet fry skinless, boneless chicken breasts in olive oil until golden brown and cooked through. Drain on papertowels, and cool.
  • 2In a large bowl,cut cooled chicken into 1" chunks.Combine with apple, celery,raisins, walnuts, green onions and seasonings.
  • 3In a small bowl, stir together mayonnaise, sour cream, lemon juice and salt. Pour over chicken mixture and toss well to coat.Chill.
  • 4Serve on romaine lettuce leaves. Sprinkle with blue cheese if desired. Serve chilled with crusty bread or rolls.
