Ingredients
- 1 pound skinless, boneless chicken breasts
- 1 large red skinned apple (such as macintosh or red delicious), cored and cut into chunks
- 2 - celery stalks, sliced
- 1/4 cup golden raisins
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/4 cup walnuts, chopped
- 1 teaspoon cinnamon
- 1/4 teaspoon curry powder
- 1/4 cup green onions, chopped
- - romaine lettuce leaves
- 2 ounces crumbled blue cheese, optional
How To Make chicken waldorf salad

Step 1In an iron skillet fry skinless, boneless chicken breasts in olive oil until golden brown and cooked through. Drain on papertowels, and cool.

Step 2In a large bowl,cut cooled chicken into 1" chunks.Combine with apple, celery,raisins, walnuts, green onions and seasonings.

Step 3In a small bowl, stir together mayonnaise, sour cream, lemon juice and salt. Pour over chicken mixture and toss well to coat.Chill.

Step 4Serve on romaine lettuce leaves. Sprinkle with blue cheese if desired. Serve chilled with crusty bread or rolls.
