I made this for a wedding reception once. It is my favorite chicken salad receipe!

Ingredients

  • 1 pound skinless, boneless chicken breasts
  • 1 large red skinned apple (such as macintosh or red delicious), cored and cut into chunks
  • 2 - celery stalks, sliced
  • 1/4 cup golden raisins
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup walnuts, chopped
  • 1 teaspoon cinnamon
  • 1/4 teaspoon curry powder
  • 1/4 cup green onions, chopped
  • - romaine lettuce leaves
  • 2 ounces crumbled blue cheese, optional

How To Make chicken waldorf salad

  • Step 1
    In an iron skillet fry skinless, boneless chicken breasts in olive oil until golden brown and cooked through. Drain on papertowels, and cool.
  • Step 2
    In a large bowl,cut cooled chicken into 1" chunks.Combine with apple, celery,raisins, walnuts, green onions and seasonings.
  • Step 3
    In a small bowl, stir together mayonnaise, sour cream, lemon juice and salt. Pour over chicken mixture and toss well to coat.Chill.
  • Step 4
    Serve on romaine lettuce leaves. Sprinkle with blue cheese if desired. Serve chilled with crusty bread or rolls.
