I made this for a wedding reception once. It is my favorite chicken salad receipe!

  • 1 lb
    skinless, boneless chicken breasts
  • 1 large
    red skinned apple (such as macintosh or red delicious), cored and cut into chunks
  • 2
    celery stalks, sliced
  • 1/4 c
    golden raisins
  • 1/2 c
  • 1/4 c
    sour cream
  • 2 tsp
    lemon juice
  • 1/2 tsp
  • 1/4 c
    walnuts, chopped
  • 1 tsp
  • 1/4 tsp
    curry powder
  • 1/4 c
    green onions, chopped
  • ·
    romaine lettuce leaves
  • 2 oz
    crumbled blue cheese, optional

How to Make Chicken Waldorf Salad


  1. In an iron skillet fry skinless, boneless chicken breasts in olive oil until golden brown and cooked through. Drain on papertowels, and cool.
  2. In a large bowl,cut cooled chicken into 1" chunks.Combine with apple, celery,raisins, walnuts, green onions and seasonings.
  3. In a small bowl, stir together mayonnaise, sour cream, lemon juice and salt. Pour over chicken mixture and toss well to coat.Chill.
  4. Serve on romaine lettuce leaves. Sprinkle with blue cheese if desired. Serve chilled with crusty bread or rolls.
