chicken waldorf salad

I threw this together one day and it's now a family favorite. On soft rich bread or croissant it makes an excellent sandwich. On these warm summer days it is an easy and elegant looking lunch or dinner served on butter lettuce leaves. The recipe is very forgiving. Exact measurements are not necessary, I don't measure so I'm guessing at quantities. Cranberries can be substituted with raisins, berries of any kind, mandarin oranges or our favorite in summer is red seedless grapes, halved. Try it different ways, it doesn't disappoint and is so easy and refreshing with the yogurt lightening up the dressing. Omit chicken and it is a great fruit salad for vegetarians.

Ingredients

  • 1 can (12.5 oz) or 1-1/2 cups diced cooked chicken
  • 1 medium tart-sweet apple, diced and unpeeled
  • 1/2 cup diced celery
  • 1/2 cup diced walnuts
  • 1/3 cup (or more) dried chopped cranberries*
  • 1/3 cup (approx) lite vanilla-bean yogurt
  • 1/3 cup mayo

How To Make chicken waldorf salad

  • Step 1
    In small container combine yogurt and mayo, set aside. Mix remaining ingredients in larger bowl, toss and add the yogurt dressing. Mayo can be eliminated if less fat is desired. Chicken can also be eliminated for vegans.
  • Step 2
    Served on lettuce leaves in 1/2 cup portions will serve about 5. Makes about 4 or 5 generous sandwiches. Recipe can easily be doubled. *Try red seedless grapes for a refreshing change to cranberries.
