- 3 1/2 cups roasted chicken breast chopped
- 1/2 cup diced celery
- 1/4 cup red onion diced, optional
- 1/2 cup dried cranberries
- 1/2 cup fresh squeezed orange juice
- 1/2 cup shaved almonds
- 1/2 cup light mayonaise
- - salt and pepper to taste
