chicken garden pasta salad
Our A/C went on the Fritz, So decided to make cold pasta salads until it was fixed. I came up with this recipe. Chicken, asparagus, Zucchini, and pasta. I made up Uncle Dan's Dressing from a dry packet mix, but it can be made with any ranch dressing you like. You also may use rotisserie chicken if you prefer. Hubby loved it! Great Summer picnic salad.

Ingredients
- 1-1/2 pound boneless chicken breast cooked and cubed
- 1/2 small red onion-finely diced
- 1 medium green zucchini- sliced and quartered
- 1/2 pound asparagus, fresh. cut into bite-size pieces
- 1 pound dry spaghetti
- 1 pint grape tomatoes-cut in half
- - ranch dressing
How To Make chicken garden pasta salad

Step 1Cook Chicken and cube into bite-sized pieces. set aside.

Step 2Cook Broken in half Spaghetti pasta until al Dente'. Drain and rinse with Cold water. Set aside. If noodles start to stick together, drizzle w/ a little Olive oil and toss.

Step 3Blanch both Zucchini and asparagus for 5 min. or until crisp tender. Drain and set aside to drain. Add to a Large re sealable container. Add in pasta. Toss together.

Step 4Cut grape in half. Add to container or bowl. Toss again. Dice red onion too. Add Ranch dressing. Toss to coat well. Chill 2 hours before serving.

Step 5You can add any other garden Vegetable like radishes, cucumber, or shredded carrot etc. Happy Eatin' Ya'll as we say in the south!
