chicken club pasta salad
This is actually my daughter Shara's idea. Her husband likes anything w/ bacon but he's also trying hard to eat healthier, so she thought for our next BBQ, why not make a pasta salad, but as a "club" salad. This way he gets a bite of that beloved bacon. He now asks for this constantly!! Hahaha

Ingredients
- 8 ounces rotini pasta
- 3/4 cup light italian dressing, i used seven seas
- 1/4 cup hellman's mayonnaise
- 2 cups cooked, chopped chicken breast
- 12 slices lower sodium bacon, cooked, cooled, crumbled
- 1 cup aged white cheddar cheese, diced
- 1 cup celery, chopped
- 1 cup green bell pepper, chopped
- 8 ounces cherry tomatoes, halved
- 1 large avocado, peeled, pitted and cubed
How To Make chicken club pasta salad

Step 1Cook pasta as directed, drain and cool completely. In lg serving bowl, whisk together Italian salad dressing and mayonnaise. Stir in cool pasta.

Step 2Next stir in chicken, crumbled bacon, cubed cheese, celery , green bell pepper and tomatoes. Mix gently until all ingredients are coated.

Step 3Add avocado and again, gently mix until coated. If not using right away, cover tightly and refrigerate.
