- 4 ounces grilled chicken
- 1/2 cup cucumber, chopped
- 1/2 cup mushrooms, sliced
- 1/4 cup carrot, shredded
- 1/2 cup string beans
- 1 tablespoon raisins
- 1 tablespoon almonds, slivered
- 2 - ry-krisp or wasa
- 1 - swiss laughing cow light wedge
- 1 teaspoon olive oil
- - flavored vinegar to taste (optional)
- - fresh squeezed lemon juice to taste (optional)
How To Make chicken & cheese crunch salad

Step 1Top bowl of lettuce with chicken, cucumber, mushrooms, carrots, string beans, raisins & almonds. Spread a cheese wedge on the crackers & break them into pieces (creating "cheesy croutons). Drizzle oil over salad along with flavored vinegar or lemon and mix.
