Ingredients

  • 8 ounces boneless, skinless chicken
  • 1 teaspoon olive oil
  • 1/4 teaspoon each, salt and pepper
  • 4 tablespoons favorite bbq sauce
  • 10 cups shredded roamaine lettuce
  • 2 cups seeded, diced tomatoes
  • 1-1/2 cup diced cucmber
  • 2 cups peeled, diced zucchini
  • 2 ounces shredded cheddar cheese
  • 1/2 cup chopped red onion
  • 1/4 cup balsamic vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon pure honey
  • 2 tablespoons canola oil
  • - salt and pepper to taste

How To Make chicken bbq salad

  • Step 1
    Lightly oil grill grates w/ oil. Heat grill to high. Rub each chicken w/ 1 tsp oil, and season w/ salt and pepper.
  • Step 2
    Grill chicken 5 mins each side and then cool. In bowl, whisk together vinegar, mustard and honey. Whisk in 2 tbsp oil. Stir in basil.
  • Step 3
    Chop chicken into strips and add to lg bowl. Stir in BBQ sauce. In lg serving bowl, toss lettuce, tomatoes, cucmber, zucchhini, cheese and red onions. Stir in dressing. Top w/ chicken.
