I am always ready to try a new salad and when BLT is in the title... well, hold me back! The BBQ sauce adds an unusual and pleasantly surprising twist that caps the salad off perfectly - ideal for a summer afternoon. The Test Kitchen
8 ctorn salad greens
2large tomatoes, chopped
1 1/2 lbchicken, cooked and cubed
10bacon strips, cooked and crumbled
2hard boiled eggs, sliced
3-4 TbspBBQ sauce, your favorite!
2 Tbspfinely chopped onion
1 Tbsplemon juice
How to Make BLT Chicken Salad
- In a small bowl, combine the 5 ingredients listed under BBQ Dressing, mix well. Cover and refrigerate until serving.
- Place salad greens on a large platter. Sprinkle with tomatoes, chicken and bacon; garnish with eggs.
- Drizzle with Dressing or serve the dressing on the side.
- My tips...as I said in my above comment, I sometimes just serve it with Ranch or a Greek Feta Dressing. I like to use cherry tomatoes and just cut them in half. Use as many eggs as you like...and I also like to add cubed mozzarella cheese. You can also use cooked and cubed turkey instead of chicken!
