My Mom made this recipe often. She worked at O.U. food an nutrition.department. She thought people to cook food on a budget that was good and nutritious This is one of her recipes that I made my way.

Ingredients

  • 1 lb
    lean ground beef
  • 1 pkg
    taco seasoning
  • 2/3 c
    water
  • 1
    head iceburg lettuce chopped into bite size pieces
  • 1
    red bell pepper chopped
  • 1
    green bell pepper chopped
  • 1/2 c
    sliced blacj olives
  • 1 can(s)
    red kidney beans drained and rinsed
  • 1 c
    diced tomatoes
  • 1/4 c
    green onions sliced thin
  • 1 c
    shredded cheddar cheese
  • 1 -10 oz
    bag corn chips or nocho doretoes
  • 1=16 oz
    catalina dressing
  • ·
    sour cream

How to Make Mom's Taco Salad As done By Eddie

Step-by-Step

  1. Brown ground beef until no pink remains drain any fat.
  2. Stir in the taco season packet and add water , simmer until thickens about 5 minutes. Set aside to cool.
  3. In a large bowl combine lettuce, peppers, black olives pinto beans or red kidney beans tomatoes and onions.
  4. Top with seasoning and cooled ground beef.
  5. Slightly crush the chips and sprinkle on top drizzle with Catalina dressing and toss to coat evenly.
  6. Garnish with sour cream and additional green onions.
  7. Serve Immediately.
