Ingredients
- 2 mangos
- 1 1/4 cups chicken stock
- 3 tablespoons vegetable oil
- 2 duck breasts
- salt and pepper
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 leek, minced
- 1 teaspoon white wine vinegar
- 3 tablespoons brown sugar
- 1 teaspoon soy sauce
How To Make duck breast with mangos

Step 1Peel the mangos and slice the fruit away from the pit. Put half the mango slices in a food processor, add the chicken stock and process until smooth. Smash the remaining mango with a fork coarsely.

Step 2Set aside. Add the oil to a pan and season the duck with salt and pepper. Cook the breast skin side down until the fat has rendered from the skin. Turn and cook about 3 more minutes on the other side. Remove to a cutting board to rest.

Step 3Add the mango mixture and remaining ingredients. Cook, stirring constantly, until reduced by half.

Step 4Slice the duck and serve over the mango mixture.
