turkey, ground
1 small
onion, diced
1/2 small
green pepper, diced
2 clove
garlic, smashed
1 Tbsp
olive oil
1 Tbsp
red pimentoes, diced
1/2 tsp
italian seasoning
1 c
tomato sauce
1/4 c
white wine
1/2 c
mozzarella cheese
1/4 c
goat cheese
salt/pepper to taste

How to Make Zucchini Canoes


  • 1In a saute pan, start by adding olive oil, onions, peppers, garlic combine a few minutes, add in the ground turkey, white wine, Italian seasoning, salt and pepper...cook on med about 10 mins until turkey is cooked....set pan aside to cool a bit.
  • 2cut the ends off the zuchinni's and slice down the middle length wise, scoop out the flesh, chop it up and add to the turkey mix, combine well.
  • 3in a baking dish add the tomato sauce, then add equal parts of the turkey mix to each half of the zuchinni's.
  • 4combine the mozzarella and goat cheese and top each "canoe"...cover and bake at 350 degrees for about 30 minutes...then uncover and broil 5 mins until cheese is nice and brown...YUMMY...enjoy with a side of white rice, pasta or salad.
