turkey veggie wrap w/ sun-dried tomato pesto mayo

This wrap came to be when I was shopping at Trader Joe's & got a call asking me to bring lunch to a yard work party at my Grandmas house in half an hour! I quickly grabbed some of my favorite sandwich things. My two son's and I favorite sandwich/wrap was born! You can get all the ingredients at Trader Joe's but I still prefer to use Bestfoods mayo & when in season tomato, spinach, and basil out of my dad's garden. I do not really have exact amounts. It is kinda how you prefer it and how many you are making, but I will do my best and you can get an idea from the picture before it's rolled up.

I love wraps. They're easy to eat if you're on the go and they work great when you're serving a crowd. The sun-dried tomato pesto is the flavor star of this recipe. They add a rich, smoky flavor to the mayo. The mix of spinach and basil is super tasty too. A nice, fresh recipe!

Ingredients

  • SANDWICH
  • 1 - piece Lavash bread (I use Trader Joe's); one piece makes four of the pieces you see in pic
  • 1-2 tablespoon sun-dried tomato pesto mayo (see below)
  • 6-ish slices smoked turkey
  • 4-6 slices Havarti cheese
  • 1-ish cup fresh spinach leaves (not packed)
  • a few sprig fresh basil leaves (small handfull)
  • several slice fresh tomato (thinly sliced)
  • several slice red onion (thinly sliced)
  • SUN-DRIED TOMATO PESTO MAYO
  • 1/2 cup mayonnaise
  • 1 tablespoon sun-dried tomato pesto from Trader Joe's

How To Make turkey veggie wrap w/ sun-dried tomato pesto mayo

  • Step 1
    Mix mayo and sun-dried tomato pesto together (I store the extra in the fridge for later; it is so good on artichokes!)
  • Step 2
    Wash and dry spinach and basil.
  • Step 3
    Wash and thinly slice tomato and red onion.
  • Step 4
    Place Lavash bread flat on work surface. Spread on sun-dried tomato pesto mayo.
  • Step 5
    Layer the remaining ingredients - smoked turkey, Havarti cheese, spinach, basil, tomato, red onion.
  • Step 6
    Starting at the shorter end, carefully roll it all up until open end is underneath the roll. Cut roll straight in half, then cut each half in half on a slight diagonal. Leave as is or secure with toothpick.
  • Step 7
