This si another great way to use up left-over turkey.

Ingredients

  • 1 can diced tomatoes w/ chiles, or jalapenos
  • 1 onion, thinly sliced
  • 3 cups cooked, shredded turkey
  • 8 whole wheat tortillas
  • 1 avocado, pitted
  • 1/4 cup favorite salsa
  • 2 tablespoons light sour cream
  • 1 cup shredded roamine lettuce
  • 1/2 cup reduced-fat, shredded mexican-style cheese

How To Make turkey tostadas

  • Step 1
    In medium saucepan, over medium heat, bring tomatoes and the juices to a boil. Add onion. Cook, stirring occasionally until onions are soft.
  • Step 2
    Add turkey, cook 2 mins more. Heat oven to 375. Spray each tortilla w/ olive oil cooking spray on both sides. Place tortillas on cookie sheets. Bake, turning once, until crisp and browned.
  • Step 3
    Mash avocado in a bowl. Stir in salsa and sour cream. Spread each tostada w/ some avocado mix. Top w/ turkey, lettuce and cheese.
