turkey taco salad

Here is another idea to use up that turkey, chicken or roast.Tacos always a great fall back recipe idea.

Ingredients

  • 3 cups diced cooked turkey breast or other
  • 2 teaspoons taco seasoning mix
  • 1 cup cooked black beans, drained
  • 1 cup cherry tomatoes, cut in half
  • 1 medium roasted red bell pepper, diced
  • 1 1/2 cups whole kernel corn,drained
  • 2 medium green onions,some tops, sliced
  • 2 teaspoons chopped fresh cilantro, more or less
  • 1/8 teaspoon each salt and pepper
  • 1/2 cup creamy ranch dressing and dip
  • 10 ounces pkg. torn salad greens
  • - tortilla chips, taco shells soft or hard
  • Garnish: - sliced black olives and shredded cheddar cheese if desired

How To Make turkey taco salad

  • Step 1
    Combine turkey and taco seasoning in a plastic bag and shake to coat add this and the, beans, tomatoes, pepper, corn, onions and cilantro in a medium bowl. Add remaining ingredients except,lettuce and chips,etc.
  • Step 2
    Mix dressing gently into mixture. Scoop turkey mixture onto lettuce lined platter to serve. Garnish with tortilla chips. Fill taco shells hard or soft(roll these up) and enjoy with your favorite drink!
