Turkey Taco Cups

This recipe came from the September/October 2015 WeightWatchers Magazine. I made some minor modifications and used my homemade taco seasoning (see recipe listed on my page for Taco Seasoning).

(7-inch) flour tortillas
1 lb
ground turkey
small onion, chopped
small red pepper, finely chopped
2 Tbsp
taco seasoning (separate recipe)
1 tsp
chopped canned chipotle in adobo
1 can(s)
(15 oz) diced tomatoes
1 can(s)
(15 oz) black beans, drained and rinsed
3/4 c
corn (thawed frozen or canned)
1/2 c
low-fat mexican cheese blend
2 Tbsp
chopped cilantro

How to Make Turkey Taco Cups


  • 1Preheat oven to 400 degrees. Lightly coat one side of tortillas with cooking spray; gently pleat and place tortilla sprayed side down, in each of 8 large muffin cups. Bake until crisp, 12-15 minutes; remove and cool.
  • 2Meanwhile, coat a nonstick skillet with cooking spray; set over medium-high heat. Add turkey, onion and pepper; cook, breaking up turkey until turkey is cooked through and onions are soft and translucent, about 8 minutes.
  • 3Add taco seasoning and chipotle; stir to combine. Add tomatoes, beans, and corn; heat through. Spoon 1 cup filling into each tortilla cup; sprinkle with cheese and cilantro and serve.
