I had all these ingredients on hand, but didn't know what to make so I looked in my recipe box from ages ago and found this. It's healthy, quick and easy to make. You can use sweet or hot sausage.

Ingredients

wagon wheel pasta
4
links of turkey sausage, i used sweet sausage
1 medium
onion, chopped
1 medium
zucchini, chopped
1/2 lb
sliced fresh mushrooms
2
14.5 oz cans diced tomatoes w/ red pepper
2
14.5 oz cans lower-sodium chicken broth
1
15 oz can red kidney beans, drained

How to Make Turkey sausage-veggie soup

Step-by-Step

  • 1Cook pasta as directed and drain. Spray a lg pot w/ cooking spray and place over medium heat. Add sausage. Cook, turning, until browned and cooked through.
  • 2Remove sausages from pot. Add vegetables to pot and cook, stirring until softened. Add tomatoes w/ juice, chicken broth and beans. Bring to a boil.
  • 3Cover. Cook over low heat until heated through. Slice sausages and add to pot. Cook until heated through.
