turkey salad sandwich (pear,potato chips & cherries)

I love any kind of turkey sandwich: either with gravy and stuffing on toast served open-faced, or plain with just salt and pepper; or in a salad like a Waldorf salad. "Waldorf Salad" gave me this idea for the Sammie/Sandwich 7/23/11 contest this week! This combination is tasty,crunchy and cool, and it might just be a new favorite.

Ingredients

  • 1 package applegate turkey, sliced
  • 1 - fresh pear, diced small
  • 1 cup dark fresh cherries, pitted and split in half
  • 1/3 cup cain's mayo (or your favorite brand),more or less to taste
  • 1 package north fork sweet-potato chips, crushed
  • 4/6 - hot dog buns/or rolls
  • - iceberg lettuce

How To Make turkey salad sandwich (pear,potato chips & cherries)

  • Step 1
    Cut the turkey into small bite-sized pieces, toss with diced pear,craisins,chopped celery and mix with mayo. Chill until ready to assemble sandwiches.
  • Step 2
    Serve in your favorite split roll, with a tablespoon of crushed sweet-potato chips on the top.
