This is a very moist, delious, healthier way to fix meatloaf. I love a good meatloaf sandwich the next day and this is just as good if not better than a beef meatloaf. I hope you enjoy!

Ingredients

  • 1 1/4 pounds ground turkey
  • 1 medium onion
  • 1/2 medium green or red pepper
  • 1/2 cup dried bread crumbs
  • 1/3 cup skim milk
  • 3 large egg whites
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 teaspoon olive oil
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon chopped fresh parsely
  • 1/2 cup tomato ketchup
  • 1 tablespoon honey
  • 1 tablespoon yellow mustard

How To Make turkey meatloaf - not your mom's!

  • Step 1
    Pre-heat oven to 375* Use cooking spray to grease a loaf pan or a sheet pan
  • Step 2
    In a skillet, heat oil and sautee onions and pepper until soft. In a medium size bowl, whip egg whites together with skim milk salt and pepper
  • Step 3
    PLace ground turkey in the bowl of egg whites,dried bread crumbs, softened onions and peppers along with herbs. Using your clean hands, mix and incorporate all ingrediants well. In another smal bowl, combine, ketchup, mustard and honey Place meat mixture in loaf pan or form a loaf on a sheet pan/ Pour ketchup glaze over the top and spread to cover Bake 45 minutes Mashed cauliflower or potatoes a green veggie and you are good to go! Don't forget the leftover cold turkey meatloaf sandwich the next day... OOOh Weee!
