With Thanksgiving coming up this is a good recipe for using up leftovers. This comes from an old Church cookbook.

Ingredients

  • 2 quarts cubed turkey
  • 1/2 cup diced giblets
  • 2 cups diced celery
  • 1/3 cup diced green pepper
  • 6 tablespoons chopped onion
  • 6 tablespoons turkey fat or butter
  • 1 1/2 quarts turkey broth
  • 6 or 7 - eggs
  • 4 quarts bread cubes
  • 3 cups bread crumbs
  • 1 tablespoon salt
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon pepper
  • 1 tablespoon pimento

How To Make turkey loaf for a crowd

  • Step 1
    Dice turkey. Saute peppers, pimento, celery and onion in fat or butter. Beat eggs slightly add to broth. Combine remaining ingredients, except bread crumbs. Sprinkle crumbs on top of turkey and bake at 325 degrees for 1 hour in 9x13-inch pan.
  • Step 2
    Cut in squares and serve with heated mushroom soup over each square.
