I like turkey and instead of buying a whole turkey for just 2 people, I buy turkey breast, this is easy to prepare and has a nice flavor instead of just roasted,,,the slaw is also a little different and nice and crunchy

Ingredients

plain low fat yogart
1 Tbsp
curry paste
3 clove
minced garlic
1 Tbsp
grated ginger root
2 lb
skinless, boneless turkey breast
slaw
4 c
nappa cabbage thinly sliced
2 medium
carrots, peeled and grated

apples peeled and diced.

green onions sliced thin
2 small
pepeppers 1 red and 1 yellow or green , sliced thin
1/4 c
fresh cilantro chopped
1/2 c
plain yogurt
2 Tbsp
white wine vinegar
2 Tbsp
sugar
1/2 tsp
cumin seeds
1/2 c
sour cream or mayonnaise
salt and pepper to taste

How to Make Turkey Breast with Slaw

Step-by-Step

  • 1In bowl stir together yogurt, curry paste, garlic and ginger...rub all over turkey refrigerate for at least 1 hour.
  • 2In separate bowl combine all the vegetables and in smaller combine the dressing ingredients and whisk together, pour over vegetables and toss until well combined.
