How to Make Sweet Potato & Turkey Summer Soup w/Zucchini Raiso

Step-by-Step

  • 1Brown the ground turkey in large soup pot, once browned, add chopped Onion, Celery, Carrots, 2 Cups of chicken broth (just enough to cover for a simmer), 5 min later, add cubed sweet potato, add 1 cup of chicken broth and cook until soft - about 10 min. Once soft, add browned ground Turkey, roasted Turkey, pulled or diced, brown sugar, remaining chicken broth, black eyed peas (not drained), red kidney beans (not drained), salt & pepper to taste (not much salt is needed as this is a flavorful recipe in it's own right, I always use the lowest sodium salt possible) This is a heart healthy recipe and very tasty!
