super easy 3 bean crockpot chili
Another low point but satisfying weight watchers chili. My sister passed this recipe on to me. Enjoy! :)

Ingredients
- 1 pound ground turkey, fat free
- 1 small onion, chopped
- 1 can (28 ounces) diced tomatoes
- 1 can (16 ounces) tomato sauce
- 1 can (4.5 ounces) chopped chilies, drained
- 1 can (15 ounces) chickpeas, undrained
- 1 can (15.5 ounces) black beans, undrained
- 1 can (15.5 ounces) small red beans, undrained
- 2 tablespoons chili powder (you can also substitute w/ a chili mix if you prefer)
- FOR THE TOPPING:
- 1/2 cup red onion, chopped
- 1/2 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese

Step 1Brown turkey and onion in skillet until cooked through.

Step 2Drain off any fat and add to crockpot. Add the rest of the ingredients and mix well.

Step 3Cook on high 6-8 hours.

Step 4Note: I prefer to rinse my canned beans and I add in stock til I get the consistency I like. The goop (technical term LOL!)that the beans are packed in grosses me out. LOL! Sometimes I even pour in some beer for extra flavor. This of course is not how Weight Watchers would want you to do it. ;)
