- 1/2 pound turkey, chpd
- 1 cup rice, uncooked (makes about 2 - 2 1/4 cups - i cookd mine in chicken broth)
- 1 large onion, chpd
- 3/4 cup parmesan cheese
- 1 large egg
- 1/2 cup gravy (red sauce w/red pepper) or 1 small can rotel tomato sauce
- 3 large red peppers, sliced in half long way n cleand
- 1 tablespoon parsley, chpd
- 1/2 cup bread crumbs
- - salt n pepper
- 1 cup mozzerella, shredd

Step 1PREPARE RICE N LET COOL.(I COOKED MINE IN CHICKEN BROTH FOR MORE FLAVA) FRY OUT CHPD TURKEY...AFTER 5 MINUTES ADD CHPD ONION N CONTINUE TO COOK UNTIL ONIONS BECOME SOFT N LET COOL.

Step 2IN A BOWL COMBINE RICE WITH CHPD TURKEY MIXTURE N EGG. ADD PARM CHEESE, CHPD PARSLEY N ADD 1/4 TSP BLACK PEPPER.

Step 3PREHEAT OVEN TO 375 LIGHTLY SALT INSIDE OF PEPPERS N PLACE IN BAKING DISH N FILL WITH RICE/TURKEY MIXTURE, DIVIDE EVENLY N USE ALL MIXTURE. TOP WITH BREADCRUMS N SPOON SAUCE OVER PEPPERS.

Step 4ONCE PEPPERS R FILLED N R IN BAKING DISH...Pour 1/4 CUP OF WATER INTO DISH N COVER WITH FOIL. BAKE FOR 30 MINUTES UNCOVER N tTOP WITH MOZZERELLA N BAKE FOR 15 MORE MINUTES...WEN DONE REMOVE TO PLATE WITH SLOTTED SPOON ....... ENJOY :)
