Ingredients

  • 2 large
    acorn squash
  • 2 Tbsp
    olive oil
  • 1 dash(es)
    nutmeg
  • 2 lb
    ground turkey
  • 1 medium
    onion diced
  • 2 clove
    garlic minced
  • 2 medium
    tomatoes diced
  • 1 pkg
    button mushroom about 8 oz
  • 1/2 small
    red bell pepper diced
  • 2 Tbsp
    tomato paste
  • 2 Tbsp
    chopped fresh parsley
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 1/2 tsp
    all spice
  • 1/2 c
    white wine
  • 1/2 c
    shredded white cheddar cheese

How to Make Stuffed a corn!

Step-by-Step

  1. Cut acorn squash in half, scoop out inside membranes,rub inside with salt pepper a few drops of olive oil and a dash of nutmeg. Bake upside down in a metal flat pan at 350 for 1 hour.
  2. Prepare meat mixture: In a large saute pan add olive oil ground turkey cook on medium heat till no longer pink add onion, garlic, red pepper mushrooms, parsley,` tomatoes, tomato paste, white wine salt, pepper and allspice. let it cook on high, simmer for 25 min. Turn off and let it cool for a few minutes.
  3. removed squash from oven and stuff with turkey mixture sprinkle with white cheddar cheese,and broil for 10 min. Enjoy. Serves 4
