South Western Shepherd's Pie

Here's a South Western twist of the traditional Shepherd's Pie.

1 lb
ground turkey
1 medium
quantity of mashed potatoes
1/2 c
hatch chilies
1/2 c
scallions -- chopped
1 Tbsp
mccormick southwest seasoning
15 oz
can of fire roasted tomatoes
15 oz
can of mixed veggies
1 (16 oz)
bag pepper jack cheese


1Brown beef, scallions, chilies, and season with Southwest Seasoning in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until meat is browned.
2Transfer meat to a casserole dish.
3Then add mixed vegetables & fire roasted tomatoes on top of the meat.
4Layer the mashed potatoes over top of vegetables.
5Cook in 375 Degree Oven until the potatoes are almost browned and then add Cheese and let it cook for a bit longer until cheese is melted.
