Here's a South Western twist of the traditional Shepherd's Pie.

Ingredients
- 1 pound ground turkey
- 1 medium quantity of mashed potatoes
- 1/2 cup hatch chilies
- 1/2 cup scallions -- chopped
- 1 tablespoon mccormick southwest seasoning
- 15 ounces can of fire roasted tomatoes
- 15 ounces can of mixed veggies
- 1 (16 oz) - bag pepper jack cheese
How To Make south western shepherd's pie

Step 1Brown beef, scallions, chilies, and season with Southwest Seasoning in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until meat is browned.

Step 2Transfer meat to a casserole dish.

Step 3Then add mixed vegetables & fire roasted tomatoes on top of the meat.

Step 4Layer the mashed potatoes over top of vegetables.

Step 5Cook in 375 Degree Oven until the potatoes are almost browned and then add Cheese and let it cook for a bit longer until cheese is melted.
