Here's a South Western twist of the traditional Shepherd's Pie.

1 lb
ground turkey
1 medium
quantity of mashed potatoes
1/2 c
hatch chilies
1/2 c
scallions -- chopped
1 Tbsp
mccormick southwest seasoning
15 oz
can of fire roasted tomatoes
15 oz
can of mixed veggies
1 (16 oz)
bag pepper jack cheese

How to Make South Western Shepherd's Pie


  • 1Brown beef, scallions, chilies, and season with Southwest Seasoning in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until meat is browned.
  • 2Transfer meat to a casserole dish.
  • 3Then add mixed vegetables & fire roasted tomatoes on top of the meat.
  • 4Layer the mashed potatoes over top of vegetables.
  • 5Cook in 375 Degree Oven until the potatoes are almost browned and then add Cheese and let it cook for a bit longer until cheese is melted.
