smoked turkey sausage and summer veggies
I love to make this dish with the fresh crook-neck squash and zucchini we get from our garden. You can mix this up with any type of your favorite sausage or bratwurst!

Ingredients
- 1 package smoked turkey sausage (or your favorite brand of sausage or brats)
- 1 small yellow crooked neck squash
- 1 small zucchini
- 1 small onion, sliced in thick onion ring type slices
- 2 cloves garlic, diced
- 1 medium green pepper, de-seeded and sliced thick
- - salt, pepper, fresh cilantro and basil to taste
- 1 tablespoon extra virgin olive oil
- 1 small chile pepper, diced (optional)
How To Make smoked turkey sausage and summer veggies

Step 1Wash and slice vegetables (I like to use summer squash, zucchini and green peppers). For an added kick, diced up a chile pepper to the mix!

Step 2In a large skillet, on medium heat, warm up the olive oil and simmer the diced garlic for about 30 seconds.

Step 3Add the squash, zucchini, pepper and onion, then season to taste with salt, pepper and fresh herbs (I also add some Italian seasoning and a dash of seasoned salt).

Step 4Lower the heat to medium low, cover and simmer for about 20-25 minutes, turning the sausages and tossing the vegetables occasionally.
