Smoked Turkey Sausage and Summer Veggies
1 pkgsmoked turkey sausage (or your favorite brand of sausage or brats)
1 smallyellow crooked neck squash
1 smallonion, sliced in thick onion ring type slices
2 clovegarlic, diced
1 mediumgreen pepper, de-seeded and sliced thick
·salt, pepper, fresh cilantro and basil to taste
1 Tbspextra virgin olive oil
1 smallchile pepper, diced (optional)
How to Make Smoked Turkey Sausage and Summer Veggies
- In a large skillet, on medium heat, warm up the olive oil and simmer the diced garlic for about 30 seconds.
- Add the squash, zucchini, pepper and onion, then season to taste with salt, pepper and fresh herbs (I also add some Italian seasoning and a dash of seasoned salt).
- Lower the heat to medium low, cover and simmer for about 20-25 minutes, turning the sausages and tossing the vegetables occasionally.
