This is a great dish to make while outdoor cooking, say on a camping trip. Also very easy to make! You can make this in a 2-quart dish or cook it all in a heavy-duty iron skillet.

  • 1 lb
    ground turkey breast
  • 1 tsp
    dried oregano
  • 3/4 c
    spicy picante sauce
  • 1
    8 oz can tomato sauce
  • 1
    16 oz can whole kernel corn, drained
  • 1/2 c
    reduced-fat, shredded cheddar cheese,
  • 1
    8 oz pkg corn muffin mix, i used jiffy's.

How to Make Saucy ground turkey & cornbread bake


  1. Lightly spray a lg skillet w/ cooking spray. Cook turkey and oregano in skillet until browned. Stir in picante sauce, tomato sauce and corn. Cook until bubbly. Stir in cheese.Pour contents into a 2-quart casserole dish. Mix corn muffin mix in bowl, as directed. Spread batter evenly over turkey mix. Bake at 375 for about 25 min, or until crust is golden brown.
