potato meatloaf muffins
These mini meatloaves are made with ground turkey, they are very tasty and moist...this recipe is based on an old classic. Your can use leftover mashed potatoes if you have any. Check out my mini cheeseburger muffins too! Delicious...

Ingredients
- 1 pound ground turkey
- 2 large potatoes, boiled and mashed (can use leftover mashed)
- 3/4 cup quick cooking oats, only
- 2 large eggs, lightly beaten
- 1 cup smoky bbq sauce
- 1/2 small yellow onion, diced
- 2 tablespoons olive oil, extra virgin
- TOPPING
- 1/4 cup smoky bbq sauce, for topping
- 1/4 cup ketchup, for topping
- 1 tablespoon brown sugar, for topping
How To Make potato meatloaf muffins

Step 1Preheat oven to 350^. Spray or oil muffin tins well with non-stick spray.You can use cupcake lines- but you have to spray them real well when you put them in the tins.

Step 2In a large bowl. combine the mix well all ingredients, except those for topping. Fill the muffin tins using an ice cream scoop or about 1/2 cup for each muffin, mound up to look like a muffin on top.

Step 3Combine the topping ingredients and brush thickly over the top of the meaty muffins. Bake for about 30 minutes depending if you are using regular or mini muffin tins. They are done when center reaches 170^ on a thermometer. To remove run a knife along the edge of each muffin and scoop them out carefully.
