Potato Meatloaf Muffins

1 lbground turkey
2 largepotatoes, boiled and mashed (can use leftover mashed)
3/4 cquick cooking oats, only
2 largeeggs, lightly beaten
1 csmoky bbq sauce
1/2 smallyellow onion, diced
2 Tbspolive oil, extra virgin
1/4 csmoky bbq sauce, for topping
1/4 cketchup, for topping
1 Tbspbrown sugar, for topping
How to Make Potato Meatloaf Muffins
- Preheat oven to 350^. Spray or oil muffin tins well with non-stick spray.You can use cupcake lines- but you have to spray them real well when you put them in the tins.
- Combine the topping ingredients and brush thickly over the top of the meaty muffins.
Bake for about 30 minutes depending if you are using regular or mini muffin tins. They are done when center reaches 170^ on a thermometer.
To remove run a knife along the edge of each muffin and scoop them out carefully.
