A tasty lower fat version of one i got from a magazine, just can't remember which magazine I got it from, lol.

Ingredients

  • 1-1/2 pound ground turkey breast
  • 1 - onion, chopped
  • 1/2 cup chopped fresh mushrooms
  • 1/4 cup chopped green bell pepper
  • 1/2 cup hot taco sauce
  • 2 tablespoons bbq sauce
  • 1 large egg, beaten
  • 1/2 cup finely crushed baked tortilla chips.
  • 1/2 teaspoon salt and a dash of pepper
  • 1 cup reduced-fat, shredded mexican-style cheese blend

How To Make mexican-style meatloaf

  • Step 1
    Heat oven to 400. Spray a 8" x 4" loaf pan.
  • Step 2
    In lg bowl, combine all ingredients, except for cheese. Pack mix into pan. Cover w/ foil and bake for 1 hour and 20 mins. Remove foil, sprinkle w/ cheese, bake until cheese melts.
