leftover essentials: turkey ala king
This is my version of leftover turkey ala king, it has many of the usual suspects (ingredients wise), and a few other bits I added to kick it up a bit. I have included some additional items (veggies and such) that you can use to vary it up a bit. Easy/Peasy to make, ready in about 30 minutes, and tastes great. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1 cup leftover turkey, chopped
- THE BASE SAUCE
- 6 tablespoons sweet butter, unsalted
- 3 tablespoons flour all-purpose variety
- 2 cups turkey or chicken stock, not broth
- 6 - 8 ounces sliced mushrooms, about 2 cups
- 1/2 medium yellow onion, diced
- 2 - 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1 cup peas, frozen variety, defrosted
- 2 tablespoons dry sherry
- salt, kosher variety, to taste
- white pepper, freshly ground, to taste
- ADDITIONAL ITEMS (JUST A FEW IDEAS)
- carrots, diced
- celery, diced
- bell pepper, diced
- onion powder
- garlic powder
- frank’s hot sauce
- cayenne pepper
- lemon juice
How To Make leftover essentials: turkey ala king

Step 1PREP/PREPARE

Step 2What will you need? You can pull this recipe off a medium-sized pot, or a high-walled skillet.

Step 3What is it? Ala King is a creamy, tasty sauce, made from easy-to-find pantry ingredients. I find it best served with chicken, turkey, or even fish; however, it does not work well with red meat (pork, beef, veal).

Step 4What to serve with it? Turkey ala king goes great over toast or nice freshly baked biscuits. In addition, it goes well served over steamed rice, noodles, or even a nice plate of mashed taters.

Step 5Variations Typically, this sauce is mixed with some turkey or chicken; however, you could make the sauce by itself (no turkey or chicken) and pour that sauce over some sautéed or breaded chicken. Or, even as a dipping sauce for chicken tenders. In addition, you can make the recipe as written but place it into a pastry crust, top with more crust and make an awesome turkey pot pie.

Step 6Gather your ingredients (mise en place).

Step 7Chop up your leftover turkey and reserve.

Step 8Prep all of the veggies you plan on putting into the ala king.

Step 9Add 2 tablespoons of butter to a pot or skillet over medium heat. After the butter melts, add your veggies and sauté until softened.

Step 10You have a choice of several different veggies, I chose onions, garlic, peas, mushrooms, and diced carrots. Since there is not a lot of cooking time on this recipe, you want the veggies to be cooked and softened.

Step 11Remove the cooked veggies from the pan/pot and reserve.

Step 12There is no need to clean out the pot/pan before the next step.

Step 13Make a roux by placing the remaining butter (4 tablespoons) into your cooking pot/pan over medium heat.

Step 14After it melts and the foaming subsides, add the flour. Continuously whisk until the roux takes on the color of straw, about 6 – 8 minutes.

Step 15Add about a cup of the stock and whisk to combine.

Step 16When it begins to simmer, slowly add the remainder of the stock.

Step 17Simmer for a few minutes and allow it to thicken.

Step 18Add the cream and stir to combine.

Step 19Add the reserved veggies and turkey.

Step 20Add the sherry, then season with a bit of salt and pepper (or other spices), to taste.

Step 21Allow to lightly simmer for about 10 minutes.
