Love me some fried cornbread!!!! Here's my sammie for this week.

Ingredients

JOHNNY CAKES MY WAY

1/2 c
flour
1 c
cornmeal
1/2 tsp
sea salt
1 tsp
black pepper
1 tsp
granulated garlic
1 tsp
granulated onion
1
egg, slightly beaten
1 c
hot milk

TOPPINGS

4 slice
turkey bacon
4
mushrooms, sliced
1/2
red bell pepper, sliced
1/2
onion, sliced

SAUCE

1/2 c
butter, unsalted
1 tsp
red wine vinegar
1 Tbsp
honey
4 dash(es)
liquid smoke
1/2 tsp
sriracha sauce
pinch
black pepper and mrs. dash original

GARNISH

2
green onion, finely chopped for garnish
1/4-1/2 c
feta or queso fresco

How to Make Johnny come lately sammie

Step-by-Step

  • 1FOR SAUCE: add all ingredients in small sauce pan over very low heat.
  • 2FOR TOPPINGS: cook bacon and crumble. Cook mushrooms, onion and red bell in small amount of olive oil.
  • 3FOR JOHNNY CAKE: add all dry ingredients and mix together. Add milk and egg, combine and cook on hot greased griddle flipping once.
  • 4Top Johnny cake with cooked topping, drizzle sauce overtop and add green onion and crumbling cheese as garnish.
