Hearty Stuffed Mushrooms

We love stuffed mushrooms, so I try to come up with different variations quite often.

1 lb
lean ground turkey
1 small
onion, chopped
1 tsp
roasted, minced garlic
9 oz. box frozen chopped spinach, thawed and drained of any excess water
15 oz. can of fire roasted tomatoes, undrained
1 c
shredded italian cheese blend
1 c
maranara sauce
baby bella mushrooms, stems removed and gills scraped out
salt & pepper, to taste
1 1/2 tsp
italian seasoning

How to Make Hearty Stuffed Mushrooms


  • 1In a medium skillet, combine the ground turkey, onions, spinach, fire roasted tomatoes and garlic. Season the turkey mixture with salt, pepper and Italian seasoning and cook over medium-high heat until turkey is no longer pink.
  • 2Meanwhile, preheat oven to 425 degrees. Remove stems from mushrooms and scrape out the gills as best as you can. Place "gill" side up on a lightly sprayed baking sheet.
  • 3Once the turkey is no longer pink, drain turkey mixture onto a paper-towel lined plate to remove any excess liquids.
  • 4Place turkey mixture back into the skillet and add the cheese and marinara sauce. Mix well until the cheese has melted.
  • 5Stuff the mushrooms with the turkey mixture and bake for about 20 minutes. Add extra cheese on top, if desired, and place back in oven for about 5 minutes or until the cheese has melted.
