We love stuffed mushrooms, so I try to come up with different variations quite often.

Ingredients
- 1 pound lean ground turkey
- 1 small onion, chopped
- 1 teaspoon roasted, minced garlic
- 1 - 9 oz. box frozen chopped spinach, thawed and drained of any excess water
- 1 - 15 oz. can of fire roasted tomatoes, undrained
- 1 cup shredded italian cheese blend
- 1 cup maranara sauce
- 10 - baby bella mushrooms, stems removed and gills scraped out
- - salt & pepper, to taste
- 1 1/2 teaspoons italian seasoning
How To Make hearty stuffed mushrooms

Step 1In a medium skillet, combine the ground turkey, onions, spinach, fire roasted tomatoes and garlic. Season the turkey mixture with salt, pepper and Italian seasoning and cook over medium-high heat until turkey is no longer pink.

Step 2Meanwhile, preheat oven to 425 degrees. Remove stems from mushrooms and scrape out the gills as best as you can. Place "gill" side up on a lightly sprayed baking sheet.

Step 3Once the turkey is no longer pink, drain turkey mixture onto a paper-towel lined plate to remove any excess liquids.

Step 4Place turkey mixture back into the skillet and add the cheese and marinara sauce. Mix well until the cheese has melted.

Step 5Stuff the mushrooms with the turkey mixture and bake for about 20 minutes. Add extra cheese on top, if desired, and place back in oven for about 5 minutes or until the cheese has melted.
