hearty, healthy turkey chili

I was looking for a healthy way to make chili, so I could start watching my diet. I also was living on my own at the time, and wanted something easy to make in a large volume so I could take some for lunch every day to work. I fell in love with this concoction. I'm also a huge fan of a nice, warm bowl of goodness in the fall and winter. This was it!

Ingredients For hearty, healthy turkey chili

  • 1 1/2 lb
    99/1 ground turkey
  • 1 md
    onion, diced
  • 1 md
    green pepper, diced
  • 1 md
    red pepper, diced
  • 2 lg
    cans rotel diced tomatoes with green chiles
  • 2 can
    pinto beans
  • 2 can
    great northern beans
  • 1 pkg
    frozen sweet corn
  • 1 pkg
    ortega taco seasoning
  • 1 pkg
    hidden valley fiesta ranch seasoning
  • 2 1/2 Tbsp
    ground cumin
  • 1 Tbsp
    chili powder
  • 1 1/2 Tbsp
    ground cinnamon
  • 1 Tbsp
    garlic salt
  • 2 to 3 tsp
    crushed red pepper flakes

    In a large chili pot, combine diced onion, green pepper and red pepper, and saute with non-fat olive oil cooking spray over medium-high heat. After about 3 min. add the garlic salt and pepper flakes to sweat the onions. Turn temperature down to medium and continue to cook...

    While that's cooking, in a separate pan cook the ground turkey until no pink shows, around 10 min. Add the cumin, cinnamon, and chili powder to the turkey, and transfer the cooked turkey to the pot of onions and peppers. Stir to combine everything, and keep it at medium-low heat so it doesn't burn while you're opening the beans and diced tomatoes...

    Then open the beans and tomatoes, and drain the beans. I usually don't drain the tomatoes, but you can if you'd like. It makes more of a sauce if you don't. Then add the beans, tomatoes and corn, stir to combine. Dump both packets of seasoning into the pot and stir well. Let chili simmer for about a half an hour... Enjoy!

    I like my chili spicy, so if the spice quantities are too large for you, you can always modify to your liking...
