Ingredients For healthy unstuffed pepper casserole

    ground turkey breast
  • 2 c
    cooked rice, white or brown
  • 1
    green bell peppper, cut into bite-size pieces
  • 1
    onion, cut into bite-size pieces
  • 1
    14 oz can condensed tomato soup
  • 1
    8 oz can tomato sauce
  • 1 tsp
    dried basil
  • 1 tsp
    dried oregano
  • 1/2 tsp
    each, salt and pepper
  • 2 Tbsp
    butter
  • 2 c
    reduced-fat, shredded cheddar cheese

How To Make healthy unstuffed pepper casserole

    Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat.

    Cook turkey breast until fully cooked. Place turkey breast in lg bowl. Add rice, green bell pepper, onion, tomato soup, tomato sauce, basil, oregano, salt and pepper, mix well.

    Spoon mix into pan. Thin slices of butter and place on top of ingredients. Sprinkle w/ shreddded cheese. Cover w/ foil. Bake 30 mins. Remove foil and bake until cheese is bubbly.
