Ingredients

1 lb
ground turkey breast
2 c
cooked rice, white or brown
1
green bell peppper, cut into bite-size pieces
1
onion, cut into bite-size pieces
1
14 oz can condensed tomato soup
1
8 oz can tomato sauce
1 tsp
dried basil
1 tsp
dried oregano
1/2 tsp
each, salt and pepper
2 Tbsp
butter
2 c
reduced-fat, shredded cheddar cheese

How to Make Healthy unstuffed pepper casserole

Step-by-Step

  • 1Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat.
  • 2Cook turkey breast until fully cooked. Place turkey breast in lg bowl. Add rice, green bell pepper, onion, tomato soup, tomato sauce, basil, oregano, salt and pepper, mix well.
  • 3Spoon mix into pan. Thin slices of butter and place on top of ingredients. Sprinkle w/ shreddded cheese. Cover w/ foil. Bake 30 mins. Remove foil and bake until cheese is bubbly.
