I love this casserole. It may be healthy, but it is still so yummy!

Ingredients

  • 1 pound ground turkey breast
  • 1 - onion, chopped
  • 1/2 teaspoon garlic powder
  • 1 - 1.25 oz pkg taco seasoning mix
  • 1 - 8 oz can tomato sauce
  • 1 cup light sour cream
  • 1 cup low-fat cottage cheese
  • 2 cups crushed baked tortilla chips
  • 2 cups reduced-fat, shredded monterey jack cheese

How To Make healthy taco casserole

  • Step 1
    Heat oven to 350. Spray a 2-1/2-quart casserole dish w/ cooking spray. Spray a lg skillet w/ cooking spray. Place skillet over med-high heat.
  • Step 2
    Add ground turkey to skillet and cook until browned. remove from heat. Add onion, garlic powder, taco seasoning, and tomato sauce. Mix well.
  • Step 3
    In bowl, combine sour cream and cottage cheese. Place 1/2 the crushed tortilla chips in bottom of casserole dish. Add enough turkey mix to cover chips. Cover mix w/ 1/2 sour cream mix. Sprinkle w/ 1/2 cheese. Repeat layers. Bake, uncovered for 30 mins, or until cheese is melted.
