    bulk ground trukey breast
  • 1/2 c
    chopped celery
  • 2 c
    medium-sized pasta shells.
  • 2
    14-1/2 oz cans chopped whole tomatoes.
  • 1
    15 oz can red kidney beans, rinsed, drained.
  • 1
    10 0z pkg frozen kernel corn, thwaed.
  • 1 tsp
    dried thyme
  • 1 tsp
    garlic powder.
  • 1 c
    reduced-fat, shredded mozzarella cheese.

How to Make Healthy minestrone casserole


  1. Heat oven to 375. Lightly spray a 2-1/2-quart casserole dish w/ cooking spray. In lg skillet, cook sausage and celery for 10 min, or until turkey is browned, breaking it up as you cook. Cook pasta as directed, drain. In lg bowl, put sausage and celery mix and remaining ingredients, mix well. Pour pasta and sausage mix into casserole dish, top w/ cheese. Cover w/ foil, bake 40 min.
